Get Your Caesars right, Daphne

As a Maltese citizen Daphne is surely entitled to criticise her compatriots’ cooking. However, she should first make sure of her facts.

Contrary to her assertion in last Sunday’s “Notebook”, chicken is not an authentic ingredient of Caesar salad.

According to the Oxford Companion to Food, “Caesar salad (was) invented in Tijuana in 1924 by Caesar Cardini. His original list of six ingredients (comprised) romaine lettuce, garlic, olive oil, croutons, parmesan cheese and Worcestershire sauce.”

The addition of items such as chicken, bacon and so on, is a fairly recent trend and is usually indicated by a title such as “Chicken Caesar Salad”.

So the restaurant that Daphne visited and the staff there were rather better informed than their supercilious customer.
