Guest chef Jean-Luc Amman, who comes from Strasbourg Alsace and is the area executive chef for InterContinental Hotels in Oman, will be at InterContinental Malta to organise the preparation of a special a la carte menu at Carissa between 12 and 17 November.
Mr Amman is based at the flagship InterContinental Al Bustan Palace, which is owned by His Majesty Sultan Kabous and hosts all state visits, royalty, ministers and ambassadors and has been flown over to Malta by Emirates Airlines.
He is a member of the Association Des Maitre Cuisiniers de France (Master Chef of France), a very exclusive association where only French chefs are accepted.
Mr Amman has prepared a menu that incorporates some of the unique and premium specialties of various French regions, including “Seared Duck Foie Gras Terrine layered with Forest Mushrooms accompanied by a Toasted Pink Peppercorn Brioche” for starters, “grilled Beef Tenderloin, Shallot Tatin and Fondant Potatoes served with a Beaujolais Nouveau reduction” as a main course and “Bitter Sweet Chocolate Truffle with a ‘Mojito’ Sorbet and a Rum and Raising Ragout” for dessert. Another of his treats for Carissa patrons is a seven-course menu degustation complimented by a selection of French wines supplied by Wands Ltd. Reservations are recommended on 21 377600.
