The Hotel Phoenicia’s new Pegasus Brasserie was launched to the media on Tuesday, with a mouthwatering six-course menu, featuring some of the most popular items that are offered a la carte. Executive chef Victor Borg prepared this tasting menu making use of the finest and freshest produce in season.
The recently refurbished Pegasus Brasserie, located at the entrance to Valletta, has been transformed into a stunning contemporary restaurant ideal for informal business lunches and relaxing dinners with friends. With a sleek black glass bar, a warm oak parquet flooring and a large blackboard featuring the outline of a pegasus, the whole room exudes a welcome that makes one relax instantly and settle down to enjoy good food. An outdoor area with garden furniture will be available for al fresco drinks and dining during the summer months.
The menu offers both typical brasserie style dishes such as lamb stew and roasted sea bass as well as a choice of imaginative pasta dishes and salads. Daily changing specialities are featured on the large blackboard.
During lunch, no fewer than 120 dishes were served in just over 90 minutes to the media. The executive chef was assisted by Adrian Buttigieg, Malta’s junior chef of the year, who was introduced to the journalists at the end of the meal. Adrian is the only Maltese to participate in the World Association of Chefs Society Congress being held next month in Dubai. He will be competing for the Hans Bueschkens Trophy, vying for the title of Best Young Cook in the World.
The official launch was also supported by Maltese winemaker Emmanuel Delicata who presented their unique indigenous Girgentina and Gellewza Frizzante wines as a welcome aperitif and wines from their Medina range to accompany the food. The wines served were the 2007 Medina Girgentina Chardonnay IGT Maltese islands, the 2007 Medina Rose Grenache DOK Malta, and the new 2007 Medina Sangiovese IGT Maltese islands.
