As readers very well know, I have been publishing cookery books, especially those related to Maltese food since 1974, when I published my first book Kċina Maltija – Maltese Cuisine. Since then this has been reprinted and updated over six times. It was also published in four languages more than 12 times.
As your readers know, our collection of Maltese recipes is very limited. No one knows exactly which recipes are really and truly Maltese. That is the reason why I use the term ‘Popular Maltese Recipes’.
At present I am busy preparing a new extensive edition that will be published in the first six months of 2011 and will be translated into seven languages.
This new edition will be based mainly on a collection of recipes by my nanna Ġorġina Dougall. She was a great cook, and since she was a great believer in the slow cooking process, her food was always something very special.
I would like to invite all your readers, especially Gozitans, who have some popular Maltese recipes they would like to share with others to send them to me. These recipes will be included in the forthcoming publication. Together with the recipes, any old photos will also be appreciated. Apart from being included in this publication all the recipes will also be featured on our website www.tisjir.com. This invitation is also extended to convents and monasteries. Due credit will be given to all contributors.
