Malta Independent Wednesday, 9 April 2014, 19:27 Last update: about 13 years ago

Easter is bigger and better than ever this year at Hotel Phoenicia with two Easter lunches that are sure to please all. Guests may choose from a family-friendly event in Phoenix, or get a whole new spin on Easter with a mouthwatering 3-course table d'hôte menu at Pegasus.

Phoenix makes the very best of fresh Maltese produce to bring you an innovative menu that features delicious Mediterranean cuisine. Executive Chef Saul Halevi and his award-winning brigade of chefs specialise in putting together seasonal menus featuring the freshest local seafood, lamb, beef, pork, game and fresh vegetables depending on what's best at market. All this matched to a superbly stocked cellar with wines that have been carefully chosen by Food & Beverage Manager Francesco Perricone to complement chef's aromatic menus, with the wine list rich in European and New World wines. The Phoenicia's Afternoon Teas are sublime and amongst the best in Malta! For larger parties, staff are willing to arrange private dining in nicely appointed function suites.

Easter luncheon at Phoenix showcases a fabulous menu providing a sumptuous selection that ranges from light and  exquisite sushi to carvery piled with pepper crusted roast beef accompanied by a mustard jus and roasted leg of lamb with

rosemary and garlic. This speciality carvery is twinned to a classic traditional Easter roast freshly cut any way you like it  by skilled service staff. Elegantly and carefully decorated, this expansive dining room, with fine feature windows overlooking the gardens, has a relaxed and tranquil atmosphere.

Executive Chef Saul Halevi and his award-winning brigade of chefs have put together a bountiful menu for this  celebratory occasion with over 20 choices of starters, including 4 very special lamb dishes - spiced flaked lamb shanks with chilies and chickpeas, mini-lamb skewers with green pea guacamole, mini lamb shepherd’s pie and lamb koftas, plus  a soup station, a pasta station, carvery and 4 stunning main courses.

Desserts in true Phoenix tradition will make up for all  the sacrifices during lent. Kids will be served orange juice on arrival while adults have the chance to enjoy a refreshing  Mimosa to help work up an appetite. Live music from Tony Polidano and Richard Edwards of Firelight brings the atmosphere up another notch.

For those looking to move outside the traditional Phoenix family luncheon, adults can enjoy an Easter table d'hôte lunch  that goes above and beyond. The à la carte Pegasus makes the very best of fresh Maltese produce to bring you an innovative menu that features delicious Mediterranean cuisine. This is a prix fixé 3 course Mediterranean menu with live carvery at only €34, where one can relax and unwind over healthy and delicious food in one of Malta's most acclaimed eateries.

Served with a hot pot of your favourite blend Hotel Phoenicia firmly believe that Easter Afternoon Tea buffet is one of the  joys of life. It's a great way to spend time with friends, family, and even give as a gift. Get ready for your love of this wonderful tradition to be taken to a whole new level.

Traditionally, the superb range of teas is accompanied by luxury  ingredient sandwiches such as cucumber, egg and smoked salmon, freshly baked scones with jam and cream, cake and  pastries. Not forgetting Phoenicia's very own delicious homemade cookies and Easter-inspired treats complemented by  tasty tunes of Maestro Sammy Galea. The choice of 17 refreshing teas on the ornate tea menu will soothe old and young alike as the perfect unforgettable Easter experience.

Food & Beverage Manager Francesco Perricone says, "Hotel Phoenicia encapsulates the spirit of Easter by bringing traditional hospitality values of good customer service and attention to detail into a mix with delicious food that is all about the traditional celebration. Our success every Easter is due to one simple but vitally important fact, the dedication and professionalism of our teams - both back-of-house and front-of-house, who support this traditional approach to enjoying Easter and who strive to exceed guests' expectations at every opportunity."
