Dining Out On Friday: Al Molo Restaurant

Al Molo is situated right on the water’s edge at the lovely Portomaso Marina in St. Julian’s. The restaurant brings together the best possible ingredients for a memorable dining experience...great location, beautiful decor, inspired food by a multi award-winning chef, impeccable service and that little something, that is difficult to put your finger on, which really makes Al Molo a special restaurant.

Getting to Al Molo is easy with the adjacent Portomaso car park at hand and a dedicated back door leading straight into the restaurant (level -5 lower and free parking for patrons). The restaurant’s decor is fresh, contemporary and elegant. White fabrics contrast with dark wooden chairs and parquet, while colourful abstract paintings are a beautiful backdrop on the white washed walls. As inviting as Al Molo’s interiors are, there is also the option to dine outdoors on a terrace overlooking the yacht marina flanked by The Hilton and luxury apartments.

The food...well, the food is nothing short of excellent, as can only be expected from the Chef, Victor Borg – a mini celebrity in the local dining scene. Victor is renowned for his creativity and perfectionism in his delicious food work. The combined experience gained in heading the kitchens of top local restaurants (including his own and now legendary Mange Tout) and foreign stints with top international Michelin-starred chefs (including Gordon Ramsay and Eyvind Hellstrom), have been fully capitalised on and brought together to create some exquisite dishes at Al Molo.

Al Molo’s menu is a successful mix of Italian, Mediterranean and Continental cuisine. The chef draws inspiration from the best produce and latest techniques available. Be it a goats cheese soufflé or a carpaccio of octopus for antipasti, pasta from Gragnano or homemade ravioli for starters, a steamed smoky sea bass or a slow cooked rump of milk-fed veal for mains...it is all cooked perfectly, mouth-watering and served in style.

But Al Molo is not only about the food. The experienced front-office team, led by the amiable and knowledgeable Andrea Depasquale Schranz, is fully deserving of a five star status for their service. The restaurant staff are helpful but unobtrusive…you are expertly guided through the menu, offered wine assistance by the fully qualified sommelier and are well taken care of throughout the evening.

Prices are no more than what you would expect to pay for an upscale restaurant in the area. Considering the unique and top end cuisine, service and surroundings, it is all very good value for a genuine fine dining experience.

Josanne Cassar speaks to chef Victor Borg

How long have you been a chef?

21 years

What made you choose this career?

Since I was 15 years of age I’ve known exactly what I wanted. Being a chef is a profession that gives you a lot of satisfaction and you have to be very creative.

Where did you study and train?

I did a 2 year course at ITS, Diploma in food and beverage and trained in top 5 star hotels and Michelin star restaurants in the UK, Switzerland and Norway.

What new ideas have you brought to the restaurant?

I get new ideas all the time, involving everything from menus to concepts etc..

What is your favourite meal?

I like to eat everything as long as it’s good quality but I prefer pasta dishes and red meat.

At home, who does the cooking?

When I am at home and I have time, I do the cooking.

For some people, cooking is a hobby, but since it’s your job, what do you do to relax?

I watch football and dine out in restaurants.
