Supervisors of Scotts Supermarkets’ cheese and deli counters recently attended an intensive training course at the headquarters of Consorzio Ricerca Filira Lattiero Casearia (CoRFiLaC) in Ragusa Sicily. The group was led by Scotts managing director Mario Said and consultant John O’Dea.

The course, part of the EU programme T-Cheesimal focused on traditional Sicilian and Maltese cheeses - their characteristics, potential evaluation criteria, production methods, cheese cutting techniques, nutritional values, cheese sensory characteristics and classifications.

The cheeses evaluated included Ricotta Vaccina, Ragusano DOP, Pecorino Siciliano DOP and Maltese gbejniet. Mr Said emphasised that this experience will help improve the staff’s knowledge and understanding of the respective products.

“We are proud that through our input the Maltese gbejna will eventually gain DOP classification,” he commented. “The information provided during these training sessions is not only important for the better formation of our human resources team, but is also a valuable asset when helping clients make an informed decision when purchasing items from our supermarkets. Which is why we believe that Scotts is the supermarket you deserve.”

The course is one of a series of courses made possible through the close cooperation between Scotts Supermarkets and Conad Sicilia.
