A stunning new restaurant has opened in the heart of Mellieħa, under the shadow of the iconic St Mary's Church, offering a blend of traditional and innovated Spanish cuisine.
Here diners can enjoy a tantalising array of reimagined dishes, from creamy Manchego cheese & decadent truffle encased in crispy golden croquettes to locally-caught seabass taken to new heights with a crispy Serrano ham crust, served on a bed of green peas & spicy stewed chorizo.
The menu also features a selection of classic tapas and paellas, succulent meat dishes and delectable seafood, all rounded off by an exceptional dessert menu which sees items like the Spain's classic churro elevated to new heights with bold Sichuan pepper and pistachio crumbs.
This is complemented by a 200-strong wine list spearheaded by an unrivalled selection of vintages from Spain, sherry and port. In a first for a high-end restaurant on Malta, a handful of cavas replace the customary prosecco and a selection
The mixology team uses classic Spanish ingredients such as Melocoton Peach Liqueur, crispy Iberico pork, Padrón peppers and olives to create extraordinary serves. In a recipe that remains a closely guarded secret, the team has even given classic sangria a unique new twist.
Espiral is the 14th restaurant to be opened by db Group and all are ranked among the favourites in Malta. The group's other restaurants are AKI, Amami, LOA, TORA, Blu, Nine Lives, Manta, Westreme, Sonora, Amami Food Bar, Verani, Hard Rock MIA and Hard Rock Waterfront. The db Group is also the local Starbucks franchisee and owns the all-inclusive db Seabank Resort and Spa and db San Antonio Hotel and Spa.
"Mellieħa is where the story of the db Group began, back when the Seabank hotel was just a small guest house. Since then we have expanded all over Malta and we are now venturing overseas. It is therefore an honour and a pleasure for all of us in the Group to open the doors of Espiral, the latest jewel in the Mellieħa crown," said db Group chairman Silvio Debono.
CEO Robert Debono said: "With every restaurant we open, we aim to bring a new concept to Malta, to continue to enrich the increasingly vibrant culinary scene. Within a few weeks of opening, Espiral is already a favourite among tourists and locals, thanks to its great location and unique menu and cellar offerings."
The restaurant is located right outside Misraħ iż-Żjara tal-Papa Ġwanni Pawlu II, a recently renovated part of the town.
Espiral's designers, globally renowned Black Lemon Studio, were inspired by Malta's fascinating historical tapestry woven by Phoenicians, Romans, Muslims, Normans and the imposing Knights of St John. The team decided to artfully divide the restaurant into several spaces - the al fresco "Garden of Delights" and "The Cave of Pleasures" among them - harnessing fantastical elements such as abstract golden tree sculptures, a blue carpet reminiscent of a dream-like garden and stained glass inspired by 18th-century artworks.
