Keeping Traditions alive

Festive seasons feature traditional customs, especially of a culinary nature, and at Easter, figolli are on shop shelves everywhere. Another tradition that is still strong in Xaghra is the making of qassatat ta’ l-ghid. These are a cheesecake type of treat normally the size of half a lawn tennis ball. The filling consists of grated Gozitan cheese made from sheep’s milk, added to beaten egg.

The top is left open and when baked the filling will rise and overflow. This symbolises Easter and the rising up of Jesus from the tomb. This is a very old tradition which is still widely practised in Xaghra homes.
